Jamaican Pumpkin Seasoned Rice
A delicious, vegan dish of traditional Jamaican highly spiced (seasoned) rice with roasted pumpkin and chickpeas.

Ingredients
  • 3 cups pumpkin or squash cut in 1 inch cubes
  • 1 cup parboiled white rice
  • 1 cup TOTAL wild brown and white rice blend mix (Can be substituted with anotherof parboiled rice)
  • 1 tbsp non-dairy butter
  • 1 tsp sea salt
  • 2 tbsp vegetarian bouillon Grace Pumpkin Soup Mix highly recommended
  • 1 cup of red yellow and green bell pepper (1/3each)
  • 1 garlic clove diced
  • 1/4 cup onion diced
  • 2 tsp coconut or olive oil
  • 1/4 cup fresh parsley or green onions roughly chopped
  • Salt and Pepper to taste
