- 3 cups pumpkin or squash cut in 1 inch cubes
- 1 cup parboiled white rice
- 1 cup TOTAL wild brown and white rice blend mix (Can be substituted with anotherof parboiled rice)
- 1 tbsp non-dairy butter
- 1 tsp sea salt
- 2 tbsp vegetarian bouillon Grace Pumpkin Soup Mix highly recommended
- 1 cup of red yellow and green bell pepper (1/3each)
- 1 garlic clove diced
- 1/4 cup onion diced
- 2 tsp coconut or olive oil
- 1/4 cup fresh parsley or green onions roughly chopped
- Salt and Pepper to taste
