- 1 cup dry red kidney beans
- 1 clove garlic
- 2 sprigs fresh thyme

- In a large bowl, add red kidney beans and 3 cups of water. Allow the beans to soak overnight.
- Drain and rinse beans.
- In a large pot, add rinsed beans, 6 cups of water, garlic and thyme. Boil on medium heat for about 45 minutes until beans are tender. You should be able to crush them between your fingers with little pressure.
This will yield about 3 cups of cooked beans. You will only use 1 cup in the recipe below. Place the remaining cup in an airtight jar with any reserved liquid after preparing the dish below. You can also add water. Freeze for your next use.
