Island-Stuffed Zucchini Boat
This dish will take you to the islands in no time flat. Zucchini is halved, then carved and stuffed with Chef Jenn’s Rice and Peas, Pulled Jackfruit, oven roasted sweet plantains, then topped with toasted almonds, coconut and a creamy soubise sauce. A drizzle of a secon sauce – a sweet and spicy one seals the deal. All aboard!
