Vegan Sweetened Condensed Milk
A lovely vegan (dairy-free) version of liquid gold.

  • 1 14 oz can full fat coconut milk
  • 2 tbsp cane sugar
  • 1 tsp vanilla

  • 1 14 oz can full fat coconut milk
  • 2 tbsp cane sugar
  • 1 tsp vanilla
Instructions
  1. Add milk to a saucepan. Bring to a gentle boil on medium-high heat. Watch carefully to avoid spill over (4-5 mins). Whisk often to avoid scorching.
  2. Add sugar and whisk until dissolved. Reduce heat and allow to simmer uncovered for 30 minutes or until liquid has reduced in half.
  3. Remove from heat and stir in vanilla.
  4. Allow to cool, then store in air tight container in a refrigerator to further thicken. Use in your favorite recipes.
